INGREDIENTS
250g Extra-Firm Tofu
100g Shelled Edamame
90g Broccoli
120g Red Bell Pepper
50g Snap Peas
1 clove Garlic
1 tsp Fresh Ginger
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Oil
1 tsp Sesame Seeds
1 tbsp Scallions
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a non-stick pan over medium-high heat, add the sesame oil and lightly fry the tofu cubes until each side turns golden and crispy. Once done, set aside.
In the same pan, add minced garlic and ginger, stirring until fragrant, about 30 seconds.
Add broccoli, red bell pepper, and snap peas to the pan, stirring frequently. Sauté vegetables for about 3-4 minutes to maintain their crunch.
Stir in the shelled edamame and drizzle the low-sodium soy sauce over the vegetables.
Return the crispy tofu to the pan, combining all ingredients and letting the flavors meld for another 1-2 minutes.
Plate the stir-fry and garnish with a sprinkle of sesame seeds and chopped scallions. Serve warm.
