INGREDIENTS
1 medium Sweet Potato (130g)
4 slices Lean Turkey Bacon (approx. 70g total)
1/4 cup Reduced-Fat Cheddar Cheese (28g)
1/4 cup Nonfat Greek Yogurt (60g)
1 tsp Olive Oil (5g)
1/2 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Wash and cut the sweet potato into fries. Toss the fries in olive oil, garlic powder, salt, and pepper until evenly coated.
Spread the sweet potato fries on a baking sheet in a single layer and bake for 20-25 minutes, flipping halfway through, until crispy on the edges and tender inside.
While the fries bake, cook the turkey bacon in a skillet over medium heat until crispy. Once cooked, roughly chop the bacon into bite-sized pieces.
In a small saucepan over low heat, combine the reduced-fat cheddar cheese and nonfat Greek yogurt. Stir continuously until the cheese is melted and the sauce is smooth. Do not boil.
Once the fries are done, transfer them to a serving plate and top with the chopped turkey bacon. Drizzle the warm, creamy cheesy sauce over the fries.
Finish with a light sprinkle of salt and pepper if desired and serve immediately.
