INGREDIENTS
4 ounces Salmon Fillet
1/4 cup Panko Breadcrumbs
1 Egg White
1 tbsp Fresh Parsley (chopped)
1 tbsp Fresh Dill (chopped)
1 tsp Olive Oil
2 tbsp Nonfat Greek Yogurt
1 tsp Lemon Juice
1 clove Garlic (minced)
Salt and Pepper to taste
PREPARATION
Finely chop the salmon fillet or pulse it in a food processor until it is roughly minced. Transfer the salmon into a bowl.
Add the panko breadcrumbs, egg white, chopped parsley, chopped dill, salt, and pepper to the salmon. Gently mix until evenly combined, being careful not to overwork the mixture.
Form the mixture into 2 even patties.
Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the salmon patties and cook for about 3-4 minutes per side, until each side is crisp and the patties are cooked through.
While the patties are cooking, prepare the lemon-herb aioli by combining the nonfat Greek yogurt, lemon juice, minced garlic, a pinch of salt, and pepper in a small bowl. Mix well.
Once the patties are done, serve them on a plate with a dollop of the lemon-herb aioli on top or on the side. Enjoy while warm!
