INGREDIENTS
4 oz Ground Turkey
1 medium Red Bell Pepper
1/4 medium Onion
1/4 cup Diced Tomatoes (no salt added)
1/4 cup Diced Zucchini
1 oz Part-Skim Mozzarella Cheese
1 clove Garlic
1 tsp Cumin
1 tsp Paprika
Salt and Pepper to taste
PREPARATION
Preheat oven to 375°F.
Slice the top off the bell pepper and remove seeds and membranes. Set aside.
Finely chop the onion, garlic, and dice the zucchini if not already done.
In a non-stick skillet over medium heat, cook the ground turkey until starting to brown. Add the garlic and chopped onion, cooking until softened.
Mix in the diced tomatoes and zucchini along with cumin, paprika, salt, and pepper. Stir well and let the flavors meld for 3-4 minutes.
Spoon the turkey and veggie mixture into the hollowed bell pepper.
Top the stuffed pepper with shredded mozzarella cheese.
Place the pepper in a baking dish and bake for 20-25 minutes until the pepper is tender and the cheese is melted and bubbly.
Remove from the oven, let cool slightly, and serve warm.
