INGREDIENTS
1 cup cooked red lentils (198g)
1 large egg (50g)
0.25 cup rolled oats (20g)
2 tbsp nutritional yeast (16g)
1 medium carrot, grated (61g)
0.25 medium onion, finely diced (28g)
1 clove garlic, minced (3g)
1 tbsp fresh parsley, chopped (3.8g)
Salt & pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine the cooked red lentils, beaten egg, rolled oats, nutritional yeast, grated carrot, diced onion, minced garlic, and chopped parsley.
Season the mixture with salt and pepper, then mix thoroughly until all ingredients are well incorporated. If the mixture seems too wet, add a bit more rolled oats to help bind it.
Using your hands, form the mixture into evenly sized meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until the meatballs are firm and lightly browned on the outside.
Remove from the oven and let cool slightly before serving. Enjoy as a hearty main dish or as a protein-packed addition to your salad or pasta.
