INGREDIENTS
6 oz Pork Tenderloin
1 cup Asparagus
1 tbsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
2 tbsp Fresh Parsley (optional)
PREPARATION
Preheat your oven to 425°F (220°C).
In a small bowl, whisk together the lemon juice, minced garlic, and a pinch of salt and pepper.
Place the pork tenderloin in a shallow dish and pour half of the lemon garlic mixture over it. Allow it to marinate for at least 15 minutes while you prepare the asparagus.
Trim the woody ends of the asparagus and place them on a baking sheet. Drizzle with olive oil, and toss gently to coat. Season lightly with salt and pepper.
Place both the marinated pork tenderloin and the asparagus on the baking sheet. Roast in the preheated oven for 20-25 minutes, depending on the thickness of the tenderloin, until the pork reaches an internal temperature of 145°F (63°C) and the asparagus is tender and slightly caramelized.
Remove from the oven and let the pork rest for 5 minutes before slicing.
Drizzle the remaining lemon garlic mixture over the sliced pork and garnish with fresh parsley. Serve immediately.
