INGREDIENTS
2 oz Salmon Fillet
1 medium Sweet Potato
1 cup Broccoli
3 tbsp Extra Virgin Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Preheat a skillet over medium-high heat and add 1.5 tablespoons of extra virgin olive oil.
Season the salmon lightly with salt and pepper.
Sear the salmon fillet on each side for about 2-3 minutes or until just cooked through. Remove from skillet and set aside.
Peel and cube the sweet potato. In a small pot, add the sweet potato with enough water to cover, bring to a simmer and cook until tender, about 10-15 minutes.
While the sweet potatoes cook, steam the broccoli for about 5 minutes until bright green and crisp-tender.
In a small pan, heat the remaining 1.5 tablespoons olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
Drain the sweet potatoes and mash them with the sautéed garlic and olive oil, adding a pinch of salt and pepper.
Plate the garlic mashed sweet potatoes, place the seared salmon on the side, and add the steamed broccoli. Serve warm.
