INGREDIENTS
4 oz Lean Ground Beef (95% lean)
1 oz Reduced-Fat Cheddar Cheese
0.5 cup Black Beans
1 medium Red Bell Pepper (diced)
1 medium Tomato (diced)
1 tsp Olive Oil
1 tsp Cumin Powder
1 tsp Smoked Paprika
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
On a sheet pan, drizzle the olive oil and add lean ground beef. Break the beef apart and season with cumin powder, smoked paprika, salt, and pepper.
Spread half of the diced red bell pepper over the beef for added crunch and color.
Bake in the preheated oven for 10-12 minutes, stirring halfway through, until the beef is cooked through and starting to crisp on the edges.
Remove the pan from the oven and evenly distribute the black beans over the beef mixture.
Sprinkle the reduced-fat cheddar cheese on top, followed by the remaining diced red bell pepper and diced tomato.
Return the sheet pan to the oven for an additional 3-5 minutes, or until the cheese has melted.
Remove from oven and serve immediately as a balanced and flavorful meal.
