INGREDIENTS
6.5 oz Chicken Breast
1/2 medium Sweet Potato
1 cup Mixed Greens
1/2 tbsp Olive Oil
1 tbsp Lemon Juice
2 tbsp Fresh Herbs (Parsley & Thyme)
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Season the chicken breast with salt, pepper, minced garlic, chopped herbs, and lemon juice. Let it marinate for at least 15 minutes for enhanced flavor.
Place the marinated chicken on a baking sheet and cook in the preheated oven for about 20-25 minutes, or until fully cooked and tender enough to be easily shredded.
While the chicken cooks, peel and dice the sweet potato into cubes. Toss the sweet potato cubes with olive oil, salt, and pepper, then spread evenly on another baking tray.
Roast the sweet potatoes in the oven for about 20 minutes, stirring halfway, until they are tender and slightly caramelized.
Once the chicken is done, use two forks to pull the chicken apart into shreds.
Assemble the dish by placing a generous handful of mixed greens on the plate, topping them with the pulled chicken and roasted sweet potatoes.
Drizzle a little extra lemon juice if desired and serve immediately.
