1 medium Red Bell Pepper
2 cups raw Spinach
1/4 cup Part-Skim Mozzarella Cheese
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat the oven to 375°F (190°C).
Slice the top off the bell pepper and remove the seeds and membranes. If desired, lightly brush the interior with a tiny bit of olive oil.
Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
