INGREDIENTS
4 oz Chicken Breast (raw)
1 cup chopped Broccoli
1/4 cup Nonfat Greek Yogurt
1/8 cup Light Cheddar Cheese, shredded
1/8 cup Whole Wheat Breadcrumbs
1 tsp Olive Oil
1 clove Garlic, minced
Salt and Pepper to taste
PREPARATION
Preheat the oven to 375°F.
Season the chicken breast with salt and pepper. In a skillet, heat olive oil over medium heat and sear the chicken for 2-3 minutes per side until lightly browned.
Remove the chicken from the skillet. In the same skillet, add minced garlic and lightly sauté until fragrant.
Add the chopped broccoli to the skillet and stir gently for 2 minutes to coat in the garlic olive oil. Season with a pinch of salt and pepper.
In a small bowl, mix together nonfat Greek yogurt with the light cheddar cheese.
Place the seared chicken in an oven-safe baking dish. Layer the sautéed broccoli evenly around and over the chicken.
Pour the yogurt and cheese mixture over the chicken and broccoli. Sprinkle the whole wheat breadcrumbs evenly on top.
Bake in the preheated oven for about 15-20 minutes until the chicken is fully cooked and the topping is crisp.
Remove from the oven, let cool for a few minutes, and serve warm.
