300g Firm Tofu
150g Broccoli
2 tbsp Peanut Butter
1 tbsp Low-Sodium Soy Sauce

1 tsp Fresh Ginger, grated
1 clove Garlic, minced
1 tsp Coconut Oil
PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Press the tofu to remove excess moisture, then cut it into cubes. Toss tofu cubes with 1 tsp of coconut oil and a pinch of salt if desired.
Spread the tofu cubes onto half of the baking sheet and arrange the broccoli florets on the other half. Drizzle a light amount of extra coconut oil or seasoning over the broccoli if desired.
Roast in the oven for about 25-30 minutes, turning halfway through, until the tofu is golden and the broccoli is tender with slightly crispy edges.
While the tofu and broccoli roast, prepare the peanut sauce by whisking together peanut butter, low-sodium soy sauce, lime juice, maple syrup, grated ginger, minced garlic, and 2-3 tbsp water to achieve a smooth consistency.
