PREPARATION
Preheat a non-stick skillet over medium heat and add 1.25 tablespoons of olive oil.
Add the diced red bell pepper, spinach, sliced mushrooms, and diced tomatoes to the skillet. Sauté until the vegetables soften, about 2-3 minutes.
