INGREDIENTS
300g Extra Firm Tofu
100g Shelled Edamame
1 cup Broccoli
1 medium Red Bell Pepper
1 medium Carrot
1 cup Snap Peas
1 tbsp Cornstarch
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Oil
1 tsp Sesame Seeds
1 Garlic Clove
1 tsp Fresh Ginger
PREPARATION
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
Lightly toss the tofu cubes in cornstarch to coat evenly.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of sesame oil. Fry the tofu until all sides are golden and crispy. Remove tofu and set aside.
In the same pan, add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
Add broccoli, sliced red bell pepper, carrot slices, and snap peas to the pan. Stir-fry for 3-4 minutes, ensuring the vegetables remain crisp.
Mix in the low-sodium soy sauce and gently toss the vegetables.
Fold in the crispy tofu and shelled edamame, warming them through for an additional 1-2 minutes.
Finish by sprinkling sesame seeds over the stir-fry and garnish with chopped scallions if desired. Serve immediately.
