INGREDIENTS
1 scoop Vanilla Protein Powder (30g)
1 large Whole Egg
2 large Egg Whites
1/3 cup Rolled Oats (approx. 30g)
1/2 medium Apple, diced
1/4 cup Non-Fat Greek Yogurt (approx. 60g)
1/4 cup Unsweetened Almond Milk (approx. 60ml)
1/2 tsp Ground Cinnamon
1/4 tsp Baking Powder
PREPARATION
In a blender, combine the vanilla protein powder, whole egg, egg whites, rolled oats, non-fat Greek yogurt, unsweetened almond milk, ground cinnamon, and baking powder. Blend until smooth and let the mixture sit for 3-5 minutes to allow the oats to soften.
Gently fold in the diced apple into the batter.
Heat a non-stick skillet or griddle over medium-low heat. Lightly coat with a small amount of cooking spray or oil if desired.
Pour the batter onto the skillet, forming 3-4 small pancakes. Cook until bubbles form on the surface and the edges begin to set, about 2-3 minutes.
Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.
Serve warm. Optionally, add a drizzle of maple syrup or a dusting of extra cinnamon on top.
