3 Jumbo Pasta Shells (approx. 60g)
1/3 cup Part-Skim Ricotta Cheese (80g)
1 cup Fresh Spinach
1 large Egg
1/2 cup Marinara Sauce
1/4 cup Part-Skim Mozzarella Cheese (shredded, 28g)
Salt & Pepper to taste
PREPARATION
Preheat the oven to 375°F.
Cook the jumbo pasta shells in boiling, salted water until al dente, about 8-9 minutes. Drain and set aside to cool slightly.
In a bowl, combine the ricotta cheese, fresh spinach, and egg. Mix thoroughly and season with salt and pepper.
Carefully stuff each pasta shell with the ricotta-spinach mixture.
Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the stuffed shells on top of the sauce.
