Enjoy a savory and satisfying hash that combines tender, crispy pork with sweet, caramelized cubes of sweet potato, red bell pepper and onion. This versatile dish highlights a flavorful blend of garlic and herbs, perfect for starting your day or energizing your afternoon meal.
INGREDIENTS
5 oz Pork Tenderloin
1 small Sweet Potato
1/2 cup Red Bell Pepper, diced
1/2 cup Onion, diced
1 clove Garlic
1 tsp Olive Oil
Salt & Pepper (to taste)
Optional: 1 tbsp Fresh Herbs (Parsley or Thyme)
PREPARATION
Preheat a large skillet over medium-high heat.
Pat the pork tenderloin dry and season lightly with salt and pepper.
Add half the olive oil to the skillet and sear the pork on all sides until crisp and browned, about 3-4 minutes per side. Remove the pork from the skillet once done.
Cube the sweet potato into small bite-sized pieces. In the same skillet, add the remaining olive oil if needed and toss in the sweet potatoes. Sauté for about 5 minutes until they begin to soften.
Add the diced onion, red bell pepper, and minced garlic to the skillet. Continue sautéing until the vegetables are tender and slightly caramelized, about 4-5 more minutes.
Dice the seared pork into bite-sized pieces and return to the skillet. Mix everything together and let it heat through for another 2-3 minutes.
Taste and adjust seasoning with salt and pepper. Optionally, sprinkle with freshly chopped herbs for added brightness.
Serve hot as a hearty breakfast, lunch, or dinner.
