PREPARATION
Preheat your oven to 425°F (220°C).
Trim any excess fat from the pork tenderloin and pat dry with paper towels.
Season the pork generously with salt and black pepper.
Heat a skillet over medium-high heat, add half of the olive oil, and sear the pork on all sides until golden brown, about 2-3 minutes per side.
