Lemon-Herb Pan-Seared Sardines with Roasted Asparagus and Cherry Tomatoes
Savor the fresh flavors of the sea with tender pan-seared sardines enhanced by a burst of lemon and fragrant herbs, paired with crisp roasted asparagus and sweet cherry tomatoes for a well-balanced, satisfying meal.
INGREDIENTS
150 grams Fresh Sardines
1 cup Asparagus (134g)
1 cup Cherry Tomatoes (150g)
1 tbsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
1 tbsp Fresh Parsley, chopped
1 clove Garlic, minced
PREPARATION
Preheat the oven to 425°F.
Rinse the asparagus and cherry tomatoes. Trim the woody ends off the asparagus.
In a bowl, toss the asparagus and cherry tomatoes with half of the olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
Roast the vegetables in the preheated oven for about 12-15 minutes until tender and slightly charred.
While the vegetables roast, pat the sardines dry with a paper towel. Season them lightly with salt and pepper.
In a small bowl, mix the fresh lemon juice, chopped parsley, and minced garlic.
Heat the remaining olive oil in a non-stick skillet over medium-high heat. Once hot, add the sardines and sear for about 2-3 minutes per side, until the skin is crisp and the flesh is just cooked through.
During the last minute of cooking, drizzle the lemon-herb mixture over the sardines for an added burst of flavor.
Plate the pan-seared sardines alongside the roasted asparagus and cherry tomatoes. Serve warm and enjoy the bright, fresh flavors.
