INGREDIENTS
300g Extra-firm Tofu
2 Tbsp Peanut Butter
1 Tbsp Low Sodium Soy Sauce
1 tsp Maple Syrup
1 clove Fresh Garlic
1 tsp Fresh Ginger
100g Steamed Mixed Greens (Broccoli & Spinach)
1 tsp Sesame Oil Spray
PREPARATION
Preheat your oven to 400°F (200°C). Press the tofu to remove excess moisture, then cut it into cubes or slices.
Lightly coat the tofu pieces with sesame oil spray and arrange them evenly on a baking sheet lined with parchment paper.
Bake the tofu for about 25-30 minutes, flipping halfway through, until the edges are golden and crispy.
While the tofu bakes, prepare the peanut sauce by combining peanut butter, low sodium soy sauce, maple syrup, minced garlic, and grated ginger in a small bowl. Mix until smooth; add a tablespoon of warm water if the sauce is too thick.
Steam the mixed greens (broccoli and spinach) until they are just tender, about 3-5 minutes.
Assemble your plate by placing the steamed greens and baked tofu. Drizzle the peanut sauce over the tofu and greens.
Serve immediately and enjoy your nutrient-packed meal.
