Seared Chicken Thighs with Garlic Green Beans and Sweet Potato Mash
Savor tender seared chicken thighs paired with garlicky green beans and a velvety sweet potato mash. This dish balances savory seared meat with the natural sweetness and rustic texture of mashed sweet potato, and a pop of freshness from crisp green beans drizzled lightly with olive oil.
INGREDIENTS
200g Boneless, Skinless Chicken Thigh
125g Green Beans
150g Sweet Potato
0.33 Tbsp Olive Oil
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the chicken thigh dry and season both sides with salt and pepper.
Heat a skillet over medium-high heat. Add half of the olive oil and sear the chicken thigh for about 5-6 minutes on each side until golden and cooked through. Remove from pan and let rest.
While the chicken is cooking, bring a pot of water to a boil and blanch the green beans for 3-4 minutes. Drain and toss with a minced garlic clove and a drizzle of the remaining olive oil.
Peel and dice the sweet potato. Boil in water until tender, about 10-12 minutes. Drain and mash the sweet potato with a pinch of salt and a small drizzle of olive oil for creaminess.
Plate the seared chicken thigh alongside a serving of garlic green beans and a generous scoop of sweet potato mash.
Serve warm and enjoy this balanced dish!
