INGREDIENTS
200g Turkey Breast Cutlet
1 cup Fresh Asparagus (134g)
1.5 cups Cauliflower (150g)
2 tbsp Unsweetened Almond Milk
1 tsp Olive Oil
1 clove Garlic
Salt & Black Pepper to taste
PREPARATION
Pat the turkey cutlets dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add the turkey cutlets and sear for about 3-4 minutes per side until golden brown and cooked through. Remove from the pan and let rest.
While the turkey is cooking, steam the asparagus until tender-crisp, about 4-5 minutes.
For the cauliflower mash, steam the cauliflower florets along with a clove of garlic for about 10 minutes until very tender. Then transfer to a blender or food processor, add the unsweetened almond milk, and blend until smooth. Season with salt and pepper to taste.
To finish the mash, stir in a teaspoon of olive oil for added richness.
Plate the turkey cutlets alongside the steamed asparagus and a generous scoop of cauliflower mash. Serve immediately.
