INGREDIENTS
5 oz Salmon Fillet
1 medium White Potato
1/4 cup Skim Milk
1 tsp Olive Oil
1/2 tsp Unsalted Butter
2 tbsp Fresh Herbs (Parsley & Chives)
1 Garlic clove
Salt and Pepper to taste
PREPARATION
Rinse the salmon fillet and pat dry with paper towels. Season lightly with salt and pepper.
Place the medium potato in a pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
While the potato cooks, heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the salmon skin-side down and cook for about 4-5 minutes until the skin becomes crispy. Flip and cook for an additional 3-4 minutes, or until the salmon is just cooked through.
Once the potato is tender, drain and return to the pot. Mash the potato with 1/4 cup of skim milk, 1/2 teaspoon of butter, minced garlic, and chopped fresh herbs. Season with salt and pepper to taste until the mixture is creamy and smooth.
Plate the mashed potatoes and place the seared salmon on top or on the side. Garnish with a sprinkling of extra fresh herbs if desired, and serve immediately.
