PREPARATION
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, gently toss the tofu cubes with half a tablespoon of olive oil, garlic powder, salt, and pepper to coat evenly.
Spread the tofu on one side of the prepared baking sheet.
Peel (if desired) and chop the sweet potato into 1-inch cubes. Trim the ends of the green beans.
Place the sweet potato cubes and green beans on the other half of the baking sheet. Drizzle lightly with a little additional seasoning of salt and pepper if desired.
