Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a vibrant dinner featuring a perfectly seared wild salmon fillet, accompanied by crisp steamed asparagus and a creamy cauliflower mash enhanced with a touch of almond milk and garlic. This dish is light yet satisfying, combining fresh flavors with a delicate balance of textures.
INGREDIENTS
7 oz Salmon Fillet
1 tbsp Olive Oil
1 cup Asparagus
150 g Cauliflower
1/4 cup Unsweetened Almond Milk
1 Garlic Clove
Salt & Black Pepper to taste
1 tbsp Lemon Juice
PREPARATION
Pat the salmon dry and season both sides with salt and black pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Sear the salmon fillet, skin-side down if applicable, for about 3-4 minutes until a golden crust forms. Flip and cook for an additional 3-4 minutes until desired doneness is reached.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender-crisp.
For the cauliflower mash, steam the cauliflower florets until soft, about 8-10 minutes. Transfer to a blender or use a potato masher, add the garlic, unsweetened almond milk, and a pinch of salt and pepper. Blend or mash until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a serving of cauliflower mash. Drizzle with lemon juice before serving.
