INGREDIENTS
1 piece Boneless Skinless Chicken Thigh (150g)
1 cup Broccoli (156g)
1 tablespoon Olive Oil
3 cloves Garlic
0.5 teaspoon Salt
0.25 teaspoon Black Pepper
PREPARATION
Preheat your oven to 425°F.
Pat the chicken thigh dry with paper towels. Season both sides with salt and black pepper.
Heat a skillet over medium-high heat and add olive oil. Once hot, place the chicken thigh skin side down (if skin-on; if not, on the side that was skin) and sear for about 4-5 minutes, until a crispy golden crust forms.
Flip the chicken and sear the other side for another 3-4 minutes.
While the chicken is searing, toss the broccoli florets and minced garlic (from the 3 cloves) with a pinch of salt, pepper, and a drizzle of olive oil on a baking sheet.
Once the chicken is seared, transfer the skillet (if oven-safe) or the chicken to an ovenproof dish. Place the chicken in the oven along with the broccoli and roast for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F and the broccoli is tender and slightly charred around the edges.
Remove from the oven and let the chicken rest for 5 minutes before serving alongside the garlicky roasted broccoli.
