1/2 teaspoon turmeric
1 teaspoon curry powder
2 cups water
PREPARATION
Rinse the red lentils thoroughly under cold water and set aside.
Finely dice the yellow onion, tomato, and mince the garlic along with grating the fresh ginger.
Heat the coconut oil in a medium pot over medium heat. Add the cumin seeds and toast them for about 30 seconds until fragrant.
Add the diced onion, garlic, and ginger to the pot. Sauté until the onion is translucent, about 3-4 minutes.
Stir in the tomato, turmeric, and curry powder. Cook for an additional 2 minutes to allow the spices to bloom.
Add the red lentils and water to the pot. Bring to a gentle boil, then reduce the heat to simmer. Cover and cook for around 20-25 minutes, stirring occasionally, until the lentils are tender and the curry has thickened.
