INGREDIENTS
1/3 cup Rolled Oats (30g)
4 Egg Whites (approx. 120g)
1 scoop Vanilla Protein Powder (30g)
1 small Banana (101g)
1/4 cup Unsweetened Almond Milk
1 teaspoon Baking Powder
1 teaspoon Coconut Oil
PREPARATION
In a blender, add rolled oats and pulse until a fine oat flour forms.
Add the protein powder, egg whites, mashed banana, almond milk, and baking powder into the blender. Blend until a smooth and slightly thick batter forms.
Let the batter rest for 5 minutes to allow the oat flour to absorb the liquids for a fluffy texture.
Heat a non-stick skillet or griddle over medium heat. Lightly brush with coconut oil.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes carefully and cook for another 2 minutes until golden brown.
For caramelized bananas, slice the remaining banana into rounds. In a small pan, heat a teaspoon of coconut oil over medium heat. Add the banana slices and sauté for 1-2 minutes on each side until they develop a light caramel color.
Serve the protein pancakes warm topped with the caramelized banana slices.
