1 tbsp Olive Oil
2 cups Mixed Salad Greens
1 tbsp Whole Wheat Flour
Seasonings: Paprika, Garlic Powder, Salt, Pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Cut the chicken breast into bite-sized pieces. In a bowl, toss the chicken pieces with a light coating of whole wheat flour and your desired seasonings (paprika, garlic powder, salt, and pepper) to create a crispy exterior.
Dice the sweet potato into uniform cubes. Toss them in half of the olive oil and season with salt and pepper.
Spread the sweet potato cubes onto a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until tender and slightly crispy on the edges, stirring halfway through.
While the sweet potatoes roast, heat the remaining olive oil in a non-stick skillet over medium heat. Add the floured chicken bites and cook, stirring occasionally, for 8-10 minutes until the chicken is fully cooked and lightly crispy on the outside.
