INGREDIENTS
1 medium Sweet Potato (114g)
1 medium Red Bell Pepper (119g)
1 small Red Onion (70g)
2 Turkey Sausage Links (approx 140g total)
2 Whole Eggs
1 Egg White
0.5 tbsp Olive Oil
PREPARATION
Preheat your oven to 400°F (200°C).
Peel (if desired) and dice the sweet potato into small cubes. Dice the red bell pepper and thinly slice the red onion.
On a baking sheet, toss the sweet potato, bell pepper, and red onion with 0.5 tbsp of olive oil, salt, and pepper to taste.
Spread the vegetables evenly and roast in the preheated oven for about 25 minutes, or until tender and just beginning to crisp.
While the vegetables roast, slice the turkey sausage links into rounds.
In a skillet over medium heat, cook the turkey sausage slices until lightly browned. Remove and set aside.
In the same skillet, add the roasted vegetables and turkey sausage. Create a small well in the center, then pour in the whole eggs and egg white.
Let the eggs set a bit before gently stirring to scramble and incorporate with the hash. Cook until the eggs are fully set.
Adjust seasoning with salt and pepper if needed, then serve warm.
