PREPARATION
Finely dice the chicken breast and mince the garlic. Chop the mixed vegetables and roughly chop the spinach.
In a bowl, combine the diced chicken, mixed vegetables, spinach, and minced garlic. Stir in the Greek yogurt, and season lightly with salt and pepper.
Gently spoon the chicken and vegetable mixture onto the center of each whole wheat dumpling wrapper. Moisten the edges with a bit of water, fold over, and seal the dumpling by pressing firmly.
Heat olive oil in a non-stick pan over medium heat, and lightly sauté the dumplings for 2-3 minutes until the bottoms are slightly golden.
Add a splash of water to the pan and cover immediately, allowing the dumplings to steam for about 5-7 minutes or until the chicken is cooked through.
Remove from heat, and serve warm. Optionally, sprinkle a little extra pepper on top for added flavor.
