INGREDIENTS
5 oz Salmon Fillet (~142g)
1 cup Asparagus (~134g)
1 cup Cauliflower florets (~107g)
1/3 cup Plain nonfat Greek Yogurt (~80g)
1 tsp Olive Oil (~5g)
1 tsp Butter (~5g)
Salt, Pepper, Garlic Powder to taste
PREPARATION
Season the salmon fillet lightly with salt, pepper, and garlic powder.
Heat olive oil in a nonstick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until the salmon is just cooked through.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender-crisp.
Meanwhile, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer the steamed cauliflower to a bowl.
Add the Greek yogurt and butter to the steamed cauliflower along with a pinch of salt and pepper. Blend or mash the mixture until smooth and creamy.
Plate the seared salmon with a side of steamed asparagus and a serving of cauliflower mash. Garnish with additional seasoning if desired and serve immediately.
