INGREDIENTS
1 medium Sweet Potato (~114g)
2 large Whole Eggs
3 Egg Whites
2 ounces Lean Turkey Sausage (~57g)
1 cup Mixed Greens (Kale & Spinach, ~67g)
0.5 tablespoon Olive Oil (~7g)
PREPARATION
Preheat the oven to 425°F. Dice the sweet potato into small cubes, toss with a pinch of salt and a few cracks of black pepper, and spread them on a baking sheet.
Roast the sweet potato cubes in the oven for about 20-25 minutes, stirring halfway through, until they are crispy on the outside and tender inside.
While the sweet potato is roasting, slice the lean turkey sausage into rounds.
In a non-stick skillet, warm half the olive oil over medium heat, add the turkey sausage slices, and sauté until they begin to brown. Remove and set aside.
In the same skillet, add the remaining olive oil, then add the mixed greens. Sauté until just wilted, about 2-3 minutes. Remove and set aside with the sausage.
In a bowl, whisk together the 2 whole eggs and 3 egg whites. Pour the egg mixture into the skillet over medium-low heat. Allow it to set slightly, then gently scramble until just cooked through.
Once the roasted sweet potato cubes are done, combine them with the scrambled eggs, sautéed greens, and turkey sausage in the skillet. Stir gently to mix flavors.
Season with additional salt, pepper, and any preferred herbs, serve warm, and enjoy your protein-packed, nutrient-dense hash!
