Savor these baked enchiladas featuring lean ground beef, hearty black beans, and melted cheddar cheese all wrapped in soft corn tortillas and smothered with a tangy enchilada sauce. A comforting and balanced dish perfect for any meal time.
INGREDIENTS
3 oz Lean Ground Beef
1/4 cup Black Beans (drained)
2 Corn Tortillas
1/4 cup shredded Cheddar Cheese
1/4 cup Enchilada Sauce
1/4 medium Onion (chopped)
1 clove Garlic (minced)
Spices (Cumin, Chili Powder, Salt, Pepper) to taste
PREPARATION
Preheat your oven to 375°F.
In a skillet over medium heat, sauté the chopped onion and minced garlic until softened.
Add the lean ground beef to the skillet and cook until browned. Season with cumin, chili powder, salt, and pepper.
Stir in the black beans and a little extra spice if desired, cooking for another 1-2 minutes.
Warm the corn tortillas slightly to make them flexible. Spoon some of the beef and bean mixture onto each tortilla, sprinkle with a bit of cheddar cheese, and roll them up tightly.
Place the rolled enchiladas seam-side down in a baking dish. Pour the enchilada sauce evenly over the top and sprinkle with remaining cheese.
Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
Remove from oven and let cool for a few minutes before serving.
