INGREDIENTS
6 oz Lean Ground Turkey
1/2 cup cooked Brown Rice
1 Large Bell Pepper
1/4 cup Chopped Red Onion
1 tsp Olive Oil
1/4 tsp Garlic Powder
Salt (to taste)
Dash of Black Pepper
PREPARATION
Preheat your oven to 375°F.
Cut the top off the large bell pepper and remove the seeds and membranes. If desired, lightly roast the bell pepper in the oven for 5 minutes to soften.
Heat the olive oil in a skillet over medium heat. Sauté the chopped red onion for about 2-3 minutes until slightly softened.
Add the lean ground turkey to the skillet and cook until browned, breaking it up as it cooks. Stir in garlic powder, salt, and black pepper to season.
Mix in the cooked brown rice with the turkey and onion mixture, allowing the flavors to meld for an additional minute.
Stuff the bell pepper with the turkey and rice mixture, packing it firmly.
Return the stuffed pepper to the oven and bake for 15-18 minutes until the pepper is tender and the filling is heated through.
Remove from the oven and allow to cool slightly before serving.
