300g Firm Tofu
200g Broccoli
150g cooked Brown Rice
1 tsp Olive Oil

PREPARATION
Press the tofu to remove excess moisture and cut into 1-inch cubes.
Preheat your oven to 425°F. Toss the broccoli with a drizzle of olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender and slightly charred.
Meanwhile, heat a non-stick skillet over medium-high heat with a small amount of olive oil. Add the tofu cubes and cook for about 3-4 minutes on each side until golden and crispy.
