200g Extra Firm Tofu
56g Udon Noodles (dry)
1/2 cup Broccoli
1/2 cup Red Bell Pepper
1 medium Carrot
1 clove Garlic
1 tsp Ginger
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Oil
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
Cook the udon noodles according to package instructions until al dente, then drain and set aside.
Heat a non-stick pan over medium-high heat and add half of the sesame oil. Add the tofu cubes and sauté until all sides are golden and crispy, about 5-7 minutes. Remove tofu from the pan and set aside.
In the same pan, add the remaining sesame oil and sauté minced garlic and grated ginger until fragrant, about 30 seconds.
Add the broccoli, red bell pepper, and julienned carrot to the pan. Stir-fry the vegetables for about 3-4 minutes until they are crisp-tender.
Return the crispy tofu to the pan and add the cooked udon noodles along with the low sodium soy sauce.
