Preheat your oven to 425°F. Wash and cut the potato into fry-shaped pieces, toss them lightly in half of the olive oil, and season with a pinch of salt and pepper. Spread the fries on a baking sheet in a single layer and bake for 25-30 minutes until crispy, flipping halfway.
While the fries are baking, thinly slice the garlic and set aside.
Prepare the stir fry by slicing the beef sirloin into thin strips. Pat dry to ensure good searing.
Heat a large non-stick skillet or wok over medium-high heat and add the remaining olive oil. Once hot, sear the beef strips for about 2-3 minutes on each side until they are browned but not overcooked. Remove the beef from the pan and set aside.
In the same pan, add the garlic and stir-fry for about 30 seconds until fragrant. Add the mixed vegetables and sauté for 3-4 minutes until just tender, retaining their crisp texture.
Return the beef to the pan and pour in the soy sauce. Toss everything gently to combine, letting the flavors meld together for an additional 1-2 minutes.
Meanwhile, if not already prepared, cook the egg noodles according to package instructions until al dente, then drain.
Add the cooked egg noodles to the stir fry and toss to ensure even distribution of beef, vegetables, and noodles. Adjust seasoning if necessary.
Plate the beef noodle stir fry and serve alongside a portion of the baked potato fries. Enjoy your meal!
