A light yet satisfying breakfast scramble featuring fluffy egg whites combined with savory turkey sausage, fresh spinach, and diced bell peppers. Served with a side of tender, roasted sweet potatoes drizzled with olive oil for added richness. A delicious, balanced meal to start your day!
INGREDIENTS
6 egg whites (~198g)
2 turkey sausage links (~112g)
120g roasted sweet potato
1 cup raw spinach (~30g)
1/2 cup diced red bell pepper (~75g)
1 tsp olive oil (for sweet potatoes)
1/2 tsp olive oil (for scramble)
PREPARATION
Preheat your oven to 400°F (200°C). Toss diced sweet potato with 1 teaspoon olive oil, salt, and pepper, then spread out on a baking sheet. Roast in the oven for about 20-25 minutes until tender and slightly crisp on the edges.
While the sweet potatoes roast, slice the turkey sausage links into rounds.
In a nonstick skillet over medium heat, add 1/2 teaspoon olive oil. Once heated, add the diced bell pepper and sauté for 2 minutes until slightly softened.
Pour in the egg whites and add the turkey sausage slices. Gently stir, allowing the eggs to set into a soft scramble.
Once the eggs are nearly cooked, fold in the spinach and cook just until wilted. Season with salt and pepper to taste.
Plate the scramble alongside the roasted sweet potatoes and serve warm.
