Salt & Pepper, to taste
PREPARATION
Press the tofu for at least 10 minutes to remove excess moisture, then crumble it into a bowl.
Rinse and drain the chickpeas. Slightly mash them with a fork to break them up, leaving some whole for texture.
Dice the red bell pepper, thinly slice the red onion, chop the spinach roughly, and slice the mushrooms.
Heat olive oil in a large non-stick skillet over medium heat. Add the red onion and sauté until soft, about 2-3 minutes.
