INGREDIENTS
6 oz Salmon Fillet
5 spears Asparagus
1 cup Cauliflower
1 tsp Butter
1 tsp Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper on both sides.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until cooked through.
While the salmon is cooking, steam the asparagus in a steamer basket over boiling water for about 3-4 minutes until tender but still crisp.
For the cauliflower mash, steam or boil the cauliflower until very soft, about 8-10 minutes. Drain the cauliflower and transfer to a bowl.
Add the butter and lemon juice to the cauliflower, then mash until smooth. Season with a pinch of salt and pepper.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
