Seared Salmon with Garlic Green Beans and Cauliflower Mash
Enjoy a beautifully plated dinner featuring a perfectly seared salmon fillet paired with tender garlic-infused green beans and a creamy cauliflower mash, all drizzled with a hint of olive oil for extra richness.
INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tbsp Olive Oil
2 cloves Garlic
1/4 cup Unsweetened Almond Milk
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat half of the olive oil in a skillet over medium-high heat. Sear the salmon for about 3-4 minutes per side until a golden crust forms and the inside is just cooked through. Remove and set aside.
In the same skillet, add the garlic and sauté for about 30 seconds until fragrant, then add the green beans. Sauté for 4-5 minutes until crisp-tender, seasoning with salt and pepper.
Steam the cauliflower in a small pot or microwave until soft, approximately 6-8 minutes.
Transfer the steamed cauliflower to a blender or use a hand masher. Add the unsweetened almond milk, a pinch of salt and pepper, and blend or mash until you achieve a smooth, creamy consistency.
To plate, serve the seared salmon alongside a generous scoop of cauliflower mash and top with the garlic green beans. Drizzle the remaining olive oil over the vegetables for added flavor.
