Enjoy tender, pan-seared chicken breast topped with a vibrant, fresh herb tomato sauce served over light zucchini noodles. This dish combines bright, zesty flavors with a satisfying texture that makes for a wholesome, clean meal.
INGREDIENTS
6 oz Chicken Breast
1 tsp Olive Oil (for searing)
1 tsp Olive Oil (for sauce)
1/2 cup Diced Tomatoes
1 cup Zucchini Noodles
1 clove Garlic
2 tbsp Fresh Basil
2 tbsp Fresh Parsley
Salt and Pepper to taste
PREPARATION
Pat the chicken breast dry and season lightly with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Once hot, add the chicken breast and sear for approximately 3-4 minutes per side until golden and cooked through. Remove the chicken and let it rest.
In the same skillet, reduce heat to medium, add the minced garlic, and sauté for about 30 seconds until fragrant.
Stir in the diced tomatoes and 1 teaspoon of olive oil to the skillet. Allow the sauce to simmer for 2-3 minutes. Add freshly chopped basil and parsley, and season with salt and pepper to taste.
While the sauce simmers, prepare the zucchini noodles by either spiralizing fresh zucchini or warming pre-spiralized noodles in a separate pan for 1-2 minutes until tender.
Slice the rested chicken breast and serve it on a bed of zucchini noodles. Spoon the fresh herb tomato sauce over the top.
Garnish with additional fresh herbs if desired and serve immediately.
