INGREDIENTS
7 oz Chicken Breast (198g)
1 cup sliced Red Bell Pepper (92g)
1 medium Tomato (123g)
1 small Yellow Onion (70g)
1 tsp Olive Oil (4.5g)
2 Garlic Cloves
1 tsp Dried Oregano
0.5 tsp Black Pepper
Pinch of Salt
PREPARATION
Heat the olive oil in a slow cooker over medium heat (or use a skillet to lightly brown the chicken before transferring, if preferred).
Slice the red bell pepper, chop the tomato, and finely dice the yellow onion along with the garlic cloves.
Place the chicken breast in the slow cooker, then add the sliced bell pepper, chopped tomato, diced onion, and garlic.
Sprinkle in the dried oregano, black pepper, and a pinch of salt. Toss lightly to evenly distribute the seasonings.
Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is tender and fully cooked.
Once done, gently shred or serve the chicken as whole, and spoon the vegetables and juices over the top for extra flavor.
