INGREDIENTS
5 oz Pork Tenderloin (141g)
1 medium Sweet Potato (114g)
1 cup Fresh Green Beans (125g)
1 tbsp Extra Virgin Olive Oil (13.5g)
1 tsp Garlic Powder
0.5 tsp Dried Rosemary
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Trim any excess fat from the pork tenderloin and pat dry with a paper towel. Season with salt, pepper, garlic powder, and dried rosemary.
Peel and cube the sweet potato into bite-sized pieces. Toss them lightly with a pinch of salt and a drizzle of olive oil.
On a baking sheet, arrange the pork tenderloin in the center with the sweet potato cubes surrounding it.
Roast in the preheated oven for about 20-25 minutes, until the pork reaches an internal temperature of 145°F and the sweet potatoes are tender.
While the pork and sweet potato are roasting, trim the ends off the green beans. Heat a skillet over medium-high heat with the remaining olive oil, then add the green beans, seasoning lightly with salt and pepper. Sauté for about 5-7 minutes until they are crisp-tender and slightly charred.
Once the pork has rested for a few minutes, slice it into medallions. Plate the pork with the sweet potatoes and top with the crispy green beans.
