INGREDIENTS
6.5 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 4-5 minutes until the skin is crispy, then flip and cook for an additional 3-4 minutes until just cooked through.
While the salmon is cooking, steam the asparagus in a steamer or over a pot of simmering water for about 5 minutes until tender yet crisp.
Break the cauliflower into florets and steam until soft (about 8-10 minutes). Transfer to a bowl, add the minced garlic and olive oil, and mash until smooth with a few small chunks remaining for texture. Season with salt and pepper to taste.
Plate the salmon alongside the steamed asparagus and garlic cauliflower mash. Serve immediately.
