50g Snow Peas
1 tbsp Low Sodium Soy Sauce
1 clove Garlic
1 tsp Fresh Ginger
PREPARATION
Press the tofu to remove excess water for at least 15 minutes, then cut it into 1-inch cubes.
Place the tofu cubes in a bowl and sprinkle with sesame seeds, gently tossing until well-coated.
Heat the coconut oil in a non-stick skillet over medium-high heat and add the tofu cubes. Fry until all sides are crispy and golden, about 4-5 minutes per side. Remove tofu and set aside.
In the same skillet, add minced garlic and grated ginger, sautéing briefly until fragrant.
Add the chopped red bell pepper, broccoli, sliced carrot, and snow peas to the skillet. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
