Enjoy crispy, zesty chicken thighs infused with lemon and fresh herbs paired with sweet, roasted corn. This simple yet flavorful dish brings a delightful textural contrast – tender, juicy chicken with a crisp finish and sweet, charred kernels of corn – perfect for a balanced meal any time of day.
INGREDIENTS
2 boneless, skinless chicken thighs (200g total)
1 medium ear sweet corn (approx. 99g)
1 tsp olive oil
1/2 tbsp lemon juice
1 garlic clove
1 tsp fresh thyme
1 tsp fresh rosemary
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
In a small bowl, combine the olive oil, lemon juice, minced garlic, chopped thyme, and rosemary. Season with a pinch of salt and pepper.
Pat the chicken thighs dry and rub the herb mixture evenly over them, ensuring they are well coated.
Place the chicken thighs on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes until the skin becomes crispy and the internal temperature reaches 165°F.
While the chicken roasts, husk the sweet corn and lightly brush with a little olive oil, then season with salt and pepper. Wrap in foil and place in the oven during the last 15 minutes of the chicken cooking time, or roast directly on the oven rack until tender and slightly charred.
Once done, plate the crispy lemon-herb chicken thighs with the roasted sweet corn. Serve hot and enjoy your balanced meal.
