Preheat your grill or grill pan over medium-high heat.
Season the chicken breast with salt, pepper, and half of the minced garlic. Let it sit for a few minutes to absorb the flavors.
Grill the chicken for about 6-7 minutes per side until fully cooked and the internal temperature reaches 165°F. Once done, let it rest for a few minutes.
While the chicken is grilling, prepare the herbed rice. In a small saucepan, warm the cooked brown rice over low heat. Stir in the mixed fresh herbs, a drizzle of olive oil, and the remaining minced garlic. Season lightly with salt and pepper.
Steam the broccoli until tender but still crisp, about 5-6 minutes.
In a separate small pan, poach or fry the egg to your preference.
Plate the herbed rice as a bed, top with sliced grilled chicken breast, arrange the steamed broccoli on the side, and place the egg on top or beside the chicken.
Finish with an extra light drizzle of olive oil over the chicken and vegetables, and serve warm.
