This recipe features a succulent 6 oz chicken breast seasoned with rosemary and thyme, roasted to perfection, accompanied by a roasted sweet potato and sautéed garlic spinach drizzled with olive oil, creating a delightful blend of savory and slightly sweet flavors.
INGREDIENTS
6 oz Chicken Breast
1 medium Sweet Potato
1 cup Spinach
1 tsp Olive Oil
1 clove Garlic
1 tbsp Mixed Herbs (Rosemary & Thyme)
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Season the 6 oz chicken breast with salt, pepper, and the mixed herbs. Rub the seasoning evenly on both sides.
Place the chicken breast on a baking tray. Peel and cube the sweet potato, toss with a little olive oil, salt, and pepper, and arrange around the chicken.
Roast the chicken and sweet potato in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the sweet potato is tender.
While the chicken roasts, heat a small pan over medium heat. Add the teaspoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.
Add the spinach to the pan and stir until wilted, about 2 minutes. Season lightly with salt and pepper.
Once everything is ready, plate the roasted chicken with the sweet potato cubes and garlic spinach on the side. Serve warm.
